<li>Cofeina te poate tine treaz noaptea astfel ca ar fi bine sa nu bei cafea cu circa 5-6 ore inainte de culcare! Una sau doua cesti de cafea (sau ceai negru) consumate zilnic, pot fi
benefice, pentru ca aceasta contine antioxidanti care controleaza
distrugerea de celule.</li>
<li>Cafeaua fost descoperita de capre, cu circa un mileniu in urma, dupa
ce un pastor a observat ca turma lui a devenit deosebit de zburdalnica
dupa ce caprele au mancat din boabele maronii ale unui copac. Atunci,
pastorul a gustat si el din acele boabe si a observat ca acestea au un
efect interesant, astfel ca a decis sa-i spuna acest lucru unui imam,
care a cules boabe, le-a uscat si le-a pus in apa la fiert, dupa care a

Recent am citit un articol care m-a condus spre un blog si o poveste deosebita.<br />
Este vorba despre o tanara, Kjerstin Gruys, care timp de un an nu s-a uitat deloc in oglinda. Din start mi s-a parut un lucru ciudat, dar si extraordinar de greu de facut, mai ales ca nu s-a uitat in oglinda nici macar in ziua nuntii. Decizia fetei are la baza cateva probleme din trecut legate de anorexia de care a suferit in adolescenta, insa proiectul a ajutat-o sa scape de complexele legate de greutate si aspect.<br />

Dupa un an in care s-a machiat fara sa se uite in oglinda si a evitat suprafetele reflectorizante, proiectul a luat sfarsit in martie 2012. Concluzia ei dupa o astfel de experienta?<br />

De curand mi-am cumparat un nou busuioc in ghiveci. Stiu ca plantele nu rezista in viata mea mai mult de cateva zile, dar de la busuioc am pretentia sa reziste doar pana ce il mancam pe tot.<br />
Nu stiu daca voi reusi nici de data aceasta....Este al patrulea busuioc in ghiveci pe care incerc sa il tin in viata si mi-am pus mari sperante in el.<br />
Entuziasmata fiind de noua mea planta de apartament si avand cateva bile de mozzarella proaspata in frigider (de fapt, mai multe bile avand in vedere ca am gasit-o la oferta intr-un supermarket), m-am gandit sa pregatesc o mica gustarica de pranz pentru prietenii aflati in vizita.<br />
Capresele meu este un pic altfel decat cel clasic si nu l-am transformat intr-o salata (adica nu l-am stropit cu ulei de masline si nici cu otet balsamic), ci mai degraba intr-un sandwich.<br />
Salata Caprese este unul dintre cele mai simple aperitive de origine italiana, provenind din insula Capri si care se serveste cu precadere vara. In insula, salata contine: rosii, mozzarella, ulei de masline, oregano si rucolla. In restul Italiei, rucolla este inlocuita de busuioc.<br />
Cum nu prea ma dau in vant dupa rucolla care mi se pare destul de amara, eu am folosit busuioc. Am avut nevoie de:<br />

<li>2 rosii mari coapte </li>
<li>5-6 frunzulite de busuioc proaspat</li>
<li>200-250 g mozzarella proaspata</li>
<li>sare </li>
<li>piper</li>
</ul>
<b>Rosiile</b> le-am taiat rondele, la fel si <b>mozzarella</b>. <b>Frunzele de busuioc</b> le-am tocat feliute. Am intercalat rondelele de rosii si mozzarella. Am presarat deasupra frunzele de busuioc, <b>sare</b> si <b>piper</b>.<br />

Acum ceva timp am inceput discutia despre Macarons/Macaroons si am promis ca revin cu mai multe detalii.<br />
Dupa ce am trecut in revista <a href="http://funcookingwithioana.blogspot.ro/2012/06/sfaturi-utile-pentru-prepararea.html" target="_blank">istoria lor si tipurile de tehnici in preparare</a>, iata cateva lucruri de care sa tinem cont atunci cand ne apucam de facut Macaron:<br />
<ol>
<li>raportul intre bezea si umplutura trebuie sa fie 1:1 sau 2:1</li>
<li>umplutura trebuie sa fie fina si moale, nu lipicioasa sau tare. De asemenea, textura umpluturii trebuie sa fie in asa fel incat sa nu se scurga dintre bucatile de bezea</li>
<li>suprafata bezelei trebuie sa fie neteda si sa aiba un strat foarte subtire crocant care sa acopere structura pufoasa a bezelei</li>
<li>foloseste un termometru la cuptor</li>
<li>foloseste un cronometru pentru fiecare pas al retetei </li>
<li>foloseste o hartie de copt de buna calitate</li>
<li>cand pui bezeaua pe hartia de copt, consistenta aluatului trebuie sa creeze un varf al bezelei, insa trebuie sa fie si suficient de lichid astfel incat marginile sa se raspandeasca putin pe hartie</li>
<li>marimea bezelei trebuie sa fie intre 3 si 5 cm</li>
<li>atunci cand te hotarasti sa faci Macaron, evita zilele cu umiditate crescuta in aer pentu ca s-ar putea ca bezeaua sa nu iti iasa indiferent de strategia aplicata</li>
<li>bezeaua trebuie sa se odihneasca dupa ce a fost pusa in tava si inainte de a intra la cuptor, aproximativ 20 minute, la temperatura camerei. Astfel, contactul cu aerul creaza crusta putin crocanta </li>
<li>dupa ce ai bagat bezeaua la cuptor, fii cu ochii pe ea! Acesta nu este un preparat pe care sa il uiti in cuptor. Daca il tii sub supraveghere atenta eviti sa se arda sau sa se crape</li>
<li>daca, dupa coacere, bezeaua nu se dezlipeste de pe hartia de copt, foloseste putina apa ca sa le desprinzi, iar data viitoare lasa-le mai mult in cuptor. La ultima mea vizita in bucataria celor de <a href="http://www.pullmanhotels.com/gb/hotel-1714-pullman-bucharest-world-trade-center/index.shtml" target="_blank">Hotel Pullman</a> am gatit cu totii prajituri, mai exact prajituri pentru copii.<br />
Impreuna cu <a href="http://www.dulcegarii-culinare.ro/" target="_blank">Antonina Sociu</a>, <a href="http://lovefood.ro/" target="_blank">Bogdan Cioc</a>, <a href="http://masterchef.protv.ro/concurent/flavia-meterez.html" target="_blank">Flavia Meterez</a> (fosta concurenta la MasterChef Romania) si bineinteles, chef Dumitru Bucsa, gazda noastra, am facut cele mai delicioase deserturi despre care puteti citi <a href="http://www.lumearetetelor.ro/articole/ultima_ora/barbizon_de_la_dublu_desert_la_exclusiv_desert" target="_blank">aici</a>.<br />
In cazul meu, unul dintre deserturile preparate a fost aceasta placinta cu iaurt, preferata tuturor colegilor si prietenilor mei. Desi am incercat sa conving pe toata lumea ca este un desert foarte usor de preparat, nimeni nu ma crede, asa ca iata reteta.<br />
Aveti nevoie de:<br />

<li>1 pachet de 400g foi de placinta subtiri (cred ca sunt 12-15 foi intr-un pachet)</li>
<li>8 oua</li>
<li>1 kg iaurt de orice fel</li>
<li>8 linguri zahar</li>
<li>5 pliculete zahar vanilat</li>
<li>ulei</li>
<li>zahar pudra pentru ornat </li>
</ul>
Intr-o tava de cuptor unsa cu putin ulei, se pun rand pe rand <b>foile de placinta</b>, una peste alta. Eu a trebuit sa improvizez putin pentru ca tavile din bucataria restaurantului sunt mai mari decat cele ale unui cuptor obisnuit, asa ca am folosit niste margini de blaturi rotunde.<br />
<br />
Fiecare foaie trebuie unsa cu putin <b>ulei </b>inainte de a suprapune alta foaie. Ultima foaie, cea de la suprafata, nu se mai unge.<br />

Cand am terminat toate foile din pachet, pregatim compozitia.<br />
<b>Ouale</b> intregi se bat usor impreuna cu <b>zaharul</b> si <b>zaharul vanilat</b>. Cand zaharul s-a dizolvat, adaugam <b>iaurtul </b>si amestecam usor.<br />
Aceasta compozitie o vom turna deasupra foilor de placinta.<br />

Se coace in cuptor, la 160-180 grade, timp de 40-45 minute.<br />
Daca cumva vi se pare ca se arde la suprafata, acoperiti tava cu folie de aluminiu si mai lasati-o in cuptor. In nici un caz sa nu scoateti tava inainte sa treaca cela 40 minute, chiar daca vi se pare ca la suprafata e arsa, pentru ca o sa aveti surpriza neplacuta ca iaurtul sa nu fie copt.<br />

cu pestele: in momentul in care gatesc peste, de cele mai multe ori il
fac la cuptor, pe gratar sau il prajesc, si de cele mai multe ori se termina

Zilele trecute am tot circulat pe Facebook o poza foarte draguta cu Macaron. Cel mai probabil sunt inca placut afectata de Macaron-ele pe care le-am mancat la <a href="http://www.angelina-paris.fr/#/home/" target="_blank">Angelina</a>, in Paris. Dupa o coada ametitoare de 1 ora, am ajuns sa gust unele dintre cele mai bune Macaron din lume. Poza de pe Facebook a starnit multe comentarii si valuri de admiratie, asa ca am decis sa ma documentez si sa va impartasesc si voua cateva din secretele crearii Macaron-elor.<br />
<br />
Aceasta prajitura s-a nascut in Italia, in 1533, cand a fost pentru prima oara creata de catre bucatarul Catherinei de Medici pe vremea cand aceasta era casatorita cu Ducele d'Orleans care in 1547 a devenit rege al Frantei. Termenul "macaron" are aceeasi insemnatate ca si cuvantul "macaroni", adica aluat fin, moale.<br />
Primele Macaron erau simple prajituri facute din pudra de migdale, zahar si albusuri de ou care aratau cam asa:<br />

In Franta exista si azi foarte multe povesti legate de istoria lor, cea mai cunoscuta fiind aceea cum ca nepoata Catherinei de Medici a fost salvata de la infometare mancand Macaron.<br />
Abia in secolul 20, Macaron-ele au devenit aceasta prajitura cu doua capacele, iar Pierre Desfontaines, nepotul lui Louis
Ernest Laduree, a avut ideea sa puna si o crema intre cele doua capace si sa le lipeasca.<br />
De atunci, in Franta, Macaron-ele sunt cele mai bine vandute prajituri din cofetariile franceze.<br />
<br />
Ceea ce trebuie sa stiti despre Macaron este ca, desi nu par foarte complicate, necesita foarte multa atentie la detalii si respectarea retetei intocmai. Ai nevoie de organizare inainte, de ustensile potrivite, ingrediente de calitate si mult timp la dispozitie. Iar peste toate acestea.....multa rabdare! <br />
<br />
In primul rand este important de stiut faptul ca exista 2 feluri de retete pentru Macaron: cea italiana si cea franceza. Cu siguranta, cele frantuzesti sunt cele mai renumite, insa sa nu uitam ca totul a plecat de la un bucatar italian. Realist privind problema insa, reteta italiana este un pic mai simpla si nu necesita precizie la cel mai inalt nivel.<br />
Reteta de baza este aceeasi (bezea cu pudra de migdale si zahar), numai ca tehnica este altfel.<br />
<br />
<b>Bezeaua</b><br />
Reteta franceza: bati albusurile de oua cu o cantitate mare de zahar pana ce se intaresc si se transforma in asa numita "bezea frantuzeasca"<br />
Reteta italiana: fierbi un amestec de apa si zahar la 120 grade celsius si il adaugi treptat in amestecul de albusuri de ou batute usor spuma. <br />
<br />
<b>Amestecul</b><br />
In momentul in care vreti sa incorporati bezeaua in amestec, veti vedea ca este mai greu sa amesteci bezeaua frantuzeasca, decat pe cea italiana care este mai lichida. Faptul ca in cazul retetei italiene bezeaua este partial gatita datorita amestecului lichid si fierbinte, proteinele din oua se leaga mult mai bine. La momentul amestecarii este nevoie de foarte multa atentie, pentru ca amestecand chiar si de 2-3 ori mai mult decat necesar, va va ruina Macaron-ele.<b> </b><br />

<b>Odihna aluatului</b><br />
Aceasta este una dintre cele mai importante parti ale retetei pentru ca de ea depinde cresterea aluatului in timpul coacerii.<br />

In cazul retetei franceze este necesar un timp mai lung de odihna (aprox 30 minute vs 15 minute la reteta italiana) datorita faptului ca aluatul este mult mai umed (la reteta italiana lichidul, fiind fierbinte, se evapora mai repede si aluatul este mai uscat).</div>

Pentru ca vad tot mai multi oameni in jurul meu care au adoptat un astfel de stil de viata si pentru ca nu sunt inca sigura daca e doar o chestiune de trend si moda, sau chiar o decizie bine fondata si bazata pe un studiu amanuntit, m-am gandit sa citesc si eu mai multe despre acest stil de viata.<br />
<br />
Veganii sunt acele persoane care duc dieta vegetariana la un alt nivel. Practic dieta este una vegetariana, numai ca in afara de peste si carne, veganii nu mananca nici un fel de produs animal (oua, miere, lactate). Ei consuma legume, fructe, cereale, uleiuri, tofu, etc. In plus, ei consuma (sau ar trebui sa consume) suplimente de vitamina B12, vitamina D si calciu pentru a compensa lipsa lor din alimentatie.<br />
<br />
Termenul a aparut prima oara in 1944 de catre Elsie Shrigley si Donald Watson. La inceput, aceasta dieta nu a avut multi adepti, vegetarienii refuzand trecerea la o dieta vegana. Insa a devenit populara prin raspandirea in randul persoanelor hippie.<br />
<br />
Principalele motive pentru care o persoana alege dieta vegana sunt:<br />
<ul>
<li>motive de ordin moral - ei nu considera etic si moral uciderea animalelor pentru consumul de carne, dar nici modul in care sunt crescute in ferme. De exemplu, gainile crescute pentru oua sunt ucise dupa 2 ani, desi durata lor de viata este de pana la 10 ani. Acelasi lucru se intampla si cu vitele care sunt ucise atunci cand productivitatea lor scade, adica dupa aproximativ 5 ani, desi ele pot trai pana la 25 ani.</li>
<li>motive care tin de mediul inconjurator - cresterea animalelor necesita consumul unor cantitati enorme de grane si apa. Consumul lor genereaza un declin in mediul inconjurator. De exemplu, apa folosita la cresterea animalelor (in cea mai mare parte fiind reprezentata de apa cu care se iriga granele folosite la alimentatia animalelor) reprezinta 8% din consumul mondial de apa. </li>
<li>motive care tin de aspiratia catre o viata sanatoasa - desi veganismul necesita suplimente, un vegan poate obtine majoritatea nutrientilor necesari din alimentele non-animale. Alimentele consumate contin fibre, magneziu, potasiu, acid folic, vitamina C si E si sunt sarace in grasimi si colesterol. Un studiu a demonstrat faptul ca vegetarienii si veganii au un indice al masei corporale, o tensiune arteriala si un nivel de colesterol mai mici decat restul populatiei. </li>
<li>motive de sanatate - sunt acei oameni care au intoleranta la lactoza sau alergii la oua si pentru care dieta vegana este singura solutie</li>

Cu siguranta toate aceste motive sunt bine intemeiate si de inteles. Insa exista cazuri in care acest mod de viata este dus la extrem. In aprilie 2006, un copil de 6 saptamani a murit de foame pentru ca parintii, vegani convinsi, l-au hranit numai cu lapte de soia si suc de mere. Pe parcursul procesului de condamnare, s-a dovedit ca pe langa o dieta necorespunzatoare, copilul fusese si neglijat de catre parinti.<br />
De asemenea, au existat si cazuri de oameni care au impus o dieta vegana si animalelor de casa.<br />
<br />
Dieta vegana a inceput cu tofu, dar acum s-a diversificat foarte mult cu hummus, tahini, falafel, tajine, curry-ul vegetal indian, stir fry-urile asiatice, etc. In ceea ce priveste gatitul prajiturilor fara lapte, oua, unt, s-a gasit un substituent in laptele de soia, laptele de migdale, piureul de banane care intareste preparatele la fel ca oul si margarina care inlocuieste untul.<br />
<br />
Parerea mea este ca oamenii care aleg o astfel de dieta sunt intr-adevar dedicati si motivati in acest sens. In ultimul timp am citit destul de multe despre bucatarii renumiti si cariera lor si, in cautarile mele de pe internet, am dat peste topul creat de cei de la <b>Restaurant Magazine</b>.<br />

Marea Britanie organizeaza in fiecare an selectia si premierea celor mai bune
50 restaurante din lume. Votarea este realizata de o Academie formata din peste
800 de lideri din industria restaurantelor. Aceasta Academie este alcatuita din
27 regiuni din intreaga lume, iar fiecare regiune are 31 de membri. </div>

<span lang="FR">Membrii sunt critici culinari, bucatari renumiti, detinatori de
restaurante, iar fiecare membru detine 7 voturi. </span>Din cele 7 voturi, cel

<span lang="FR">Numeroasele studii efectuate de catre cercetatorii din toata lumea au descoperit ca merele previn unele probleme de sanatate sau cel putin reduc riscurile la care sunt expuse corpurile noastre zilnic, prin proprietatile lor curative. Marul este tonic, racoritor, antiseptic intestinal, depurativ-sanguin si este indicat pentru astenii, surmenaj, reumatism, stari febrile, eruptii cutanate, cancer, amigdalita, insomnii, nervozitate, cefalee, constipatie, fiind considerat pe buna dreptate un aliment-medicament.</span></div>

Cand laptele a inceput sa bolboroseasca, am pus si pastele, la fiert 10-12 minute, fara capac, pana cand pastele sunt al dente. </span><span lang="FR">Pe masura ce fierbeau pastele, laptele se ingrosa. Cand pastele au fost fierte, am scos batonul de vanilie.</span></div>

Un efect se resimte si in alimentatie, caci familiile au fost nevoite sa-si restranga drastic cheltuielile de zi cu zi si sa renunte la sortimentele mai putin importante in favoarea strictului necesar. Conform unor studii recente se pare ca alimentele cum sunt cartofii, pestele si alte alimente de stricta necesitate s-au vandut mai bine, in timp ce carnea, branza si zaharul s-au vandut mai putin. Toate acestea reflecta un comportament specific oamenilor stramtorati financiar, cum au fost majoritatea romanilor in anii de criza. </span></div><div style="font-family: inherit; text-align: justify;"><br />
</div><div style="font-family: inherit; text-align: justify;"><span lang="FR">Indiferent ca vorbim de produse alimentare de cea mai buna calitate, sau de marfuri de o calitate indoielnica, este clar ca mancarea din magazinele romanesti este scumpa. Unii romani apeleaza si la alte variante, folosindu-se de sistemul de cumparaturi in rate practicat de hipermarketuri. Oamenii nu se gandesc ca isi iau un pui sau o haina in rate, in conditiile in care nu au destui bani in buzunar. In plus, aproape toate magazinele adauga sistemului de plata reduceri de zeci de procente, astfel ca puteti cumpara aproape orice la preturi mici.</span></div><div class="MsoNormal" style="font-family: inherit;"><br />
</div><div class="MsoNormal" style="font-family: inherit;"><span lang="FR">Exista din fericire chiar in plina criza economica si mijloace prin care putem sa ne procuram alimente sanatoase fara a cheltui suplimentar ba chiar dimpotriva facand si ceva economii. De fapt e de ajuns sa renuntam la anumite obiceiuri ale noastre cu care ne mai rasfatam din cand in cand pentru a identifica sume de bani foarte necesare atunci cand vom merge la piata pentru cumparaturi. </span></div><div class="MsoNormal" style="font-family: inherit;"><span lang="FR">Foarte binevenite pentru aceste momente cand cu totii ne simtim mai saraci s-au dovedit si marile supermarketuri care ofera multe produse la preturi imbatabile de aici fiind foarte recomandat sa ne procuram zaharul, uleiul, cafeaua, orezul etc. deoarece acestea tin si mai multa vreme in camara cu alimente si ne ajuta sa facem si importante economii in fiecare luna. </span></div><div class="MsoNormal" style="font-family: inherit;"><span lang="FR">Renuntand la sucurile oferite pe piata ne vom face un dublu serviciu economisind niste bani si oferind organismului o mica pauza el nemaifiind nevoit sa proceseze si niste bauturi "racoritoare" care il suprasolicita inutil. Consumul de apa proaspata din belsug este intr-adevar necesar si puteti sa va faceti provizii saptamanal cu apa de la unul din izvoarele aflate in localitatea dumneavoastra. <br />
Criza economica poate avea si niste efecte benefice pentru multi dintre noi intrucat ne va obliga sa fim ceva mai creativi in bucatarie si astfel vom putea descoperi retete convenabile si minunate despre care nu am mai auzit niciodata in viata noastra. Exista astfel multe salate de sezon care mai de care mai gustoase si sanatoase, ouale pot fi gatite in nenumarate feluri, putem face si sucuri naturale ieftine acasa, si gemuri sau dulceturi irezistibile, cat despre supe sau tocanite aici posibilitatile sunt atat de diverse incat nici sa nu mai resimtim lipsa banilor macar din punct de vedere al alimentatiei noastre zilnice. </span></div><div class="MsoNormal" style="font-family: inherit;"><br />

Prin batere, proteinele din ou se desfac formand niste capcane pentru bulele de aer, iar zaharul intareste spuma ce se formeaza. Concursuri cu premii care aduc vesti bune in casele oamenilor, impartasirea de experiente culinare intre oameni pasionati, oameni ce ne respecta si ne vestesc primavara.....toti imi fac viata mai frumoasa si imi arata ca bucuria poate izvori din cele mai marunte lucruri!<br />

Am pus crema intr-un castron, am taiat marunt cateva fire de <b style="mso-bidi-font-weight: normal;">chives </b>(care pot fi inlocuite cu orice alta verdeata va face placere, inclusiv ceapa sau usturoi verde) si le-am amestecat. Am adaugat si putina <b style="mso-bidi-font-weight: normal;">sare</b> si <b style="mso-bidi-font-weight: normal;">piper proaspat macinat</b>.</span></div>
